Black Bean and Tomato Salad


This is an easy summer side dish you could pair with fajitas, tacos, or chicken and rice. You could also just serve this over rice as a meal with a little sour cream and avocado. I came up with this recipe as a side dish for our turkey empanadas (which were yummy and will be posted soon).

Ingredients
1 can black beans, rinsed and drained
1 large tomato, diced
1 green pepper, diced
1/4 cup red onion, diced
1/8 cup cilantro, diced
1 clove of garlic, minced
1/4 teaspoon cumin
salt to taste
Juice of 1 lime

Directions:
1. Mix all ingredients and serve, or let chill in the refrigerator.
